2 oz. BarSol Pisco Acholado
2 oz. Sweet Vermouth (Rosso Torino style)
2 Dashes Angostura Aromatic Bitter

How to make it

In a mixing glass with ice add all ingredients and stir to chill. Garnish with green olive, normally served on the side of the cocktail.

The exact author and the origin of this cocktail is unknown. However, it is inferred that it the result of the influence of the Italian migration into Peru of the late 1800’s – early 1900’s. Italians brought with them the custom of imbibing vermouth aperitif cocktails. It is then that the army captains in the highlands of Puno practiced stopping at the taverns during their rounds in the freezing cold evenings to have an aperitivo that was composed of equal parts of Pisco and Vermouth, to break the evening chills. Hence, the adopted name of the Captain’s preferred cocktail.
