Ingredients

2 oz. BarSol Pisco Acholado
0.25 oz. Fresh Lime Juice
2 Dashes Angostura Aromatic Bitters
Top with Ginger Ale

How to make it

In a highball with ice, build all ingredients, bitters, Pisco, lime juice and ginger ale and stir. Garnish with lime wheel inside the glass or on the rim.

The exact author and the origin of this cocktail is unknown. However, it is inferred that it the result of the influence of the Italian migration into Peru of the late 1800’s – early 1900’s. It was customary for the Italian immigrants to consume a cocktail called the Buon Giorno (Good Morning), as a restoring potion to lift your spirit the morning after a heavy drinking night. It was commonly prepared with grappa and ginger ale. They substituted the grappa for the Pisco and added a touch of lime juice, and became a popular refreshing hangover cure. The name of the cocktail might have been adopted by the locals who commonly practiced the habit of consuming a restoring morning fish broth called “Chilcano” in the port of Callao, and therefore used it for the cocktail due to the similar restoring properties.
